Welcome to Relais de Laval, a guesthouse tucked between wild hills and fields of garrigue, in the heart of the Fenouillèdes. Here, time slows down. The old plane trees offer their peaceful shade, the stone walls hold quiet stories, and every detail reflects a deep love for the land and its rhythms. Our rooms are simple yet refined — combining rustic charm with modern comfort, perfect for rest and reconnection. In the morning, a homemade breakfast awaits: fresh bread, jams, garden fruit, and eggs from our hens, served in the soft morning light of the courtyard. Our table d’hôte is a celebration of simplicity and refinement — a four-course dinner crafted with care, where each ingredient tells a story of place and season. The vegetables, fruits, and edible flowers come straight from our organic garden. Our chickens provide fresh eggs, and we use only free-range meats and fish sourced from local producers we know and trust. Aromatic rosemary and thyme are hand-picked from the wild hills around us, infusing dishes with the subtle power of nature. Cheeses are selected from nearby farms, and each course is paired with natural wines from the region. Everything is homemade — honest, generous, and deeply rooted in the terroir. For walking, mountain biking and horseback riding the landscape presents a veritable paradise. The breathtaking beauty of this largely unspoiled mountain world has so far been preserved from the onslaught of mass tourism and thus still offers nature experiences that have become rare in Central Europe. Of course the infinite opportunities for adventure, sport and fun are not restricted to the summer months, winter sports are equally eagerly pursued. It's motorbike-season here all year around! Countless gorgeous hiking paths criss-cross the landscape, leading through vineyards, little villages, gorges and rocky mountain crests. Hiking trails are generally marked very clearly. One can explore the surrounding area either on short day hikes or traverse the Pyrenees in sections (called 'etappe') via a network of long-distance paths. There are also some specific historic paths. The "Path of the Cathars" for example leads directly through Caudiès de Fenouillèdes. Spring and autumn are the best times for hiking. The small quiet roads and dirt roads provide an ideal terrain for mountain biking.
