Sylvia and her husband opened Fairholme Manor Inn in Victoria's Rockland area in 1999. Sylvia has published 2 cookbooks by Whitecap books. Sylvia's debut book , Fabulous Fairholme: Breakfast & Brunches is a Canadian Bestseller and her second book Easy Elegance from Fabulous Fairholme : Breakfast, Brunch, Lunch features her cousin, celebrated chef Nora Pouillon of Restaurant Nora in Washington DC. In the kitchen, Sylvia likes to prepare food with seasonal, fresh and local ingredients, as she believes quality ingredients are key to fabulous results.
